We all lead busy lives and many of us don’t have much time to cook! After a full day of work, running errands, and working out, cooking is the last thing I want to do. This year I won a crock pot at our Camden Christmas party and it has been one of the best investments for my kitchen! It makes cooking extremely easy and I am able to “cook” all day while I am at work.
I found a very simple, very healthy salsa Verde chicken recipe that I make at least once a week now. You only need 3 main ingredients and can dress up the recipe however you’d like.
Ingredients:Chicken breastsVerde SalsaGreen Chile Peppers

Instructions:
First, spray your crock pot with cooking spray so the chicken breasts do not stick. Lay the chicken breasts evenly along the bottom of the crock pot.
Pour the green Chile peppers evenly over the chicken breasts. Then pour the salsa verde evenly as well.
(Optional): You can add 2 tbsp cumin and a dash of salt and pepper to the salsa before adding to crock pot for even more flavor.
Let the chicken cook on the “low” setting for 4-6 hours. Personally, I like the cook mine for 6-8 hours that way the chicken shreds easily.
That’s it! You are done!
Not only is this recipe extremely simple, it’s also healthy and delicious! I like to shred my chicken and create street tacos for Taco Tuesday or make my own burrito bowl with chopped spinach, rice, black beans, homemade guac, and a little cilantro!
